Avocado Toast with Eggs

Healthy avocado toast. A protein packed breakfast with eggs and avocado! Simple, nutritious, & perfect for any meal of your day. Quick and easy mashed avocado spread on toast topped with a fried egg with a runny yolk or a scrambled egg. Its so good!

INGREDIENTS

  • 2 Slices of Bread

  • 1 Avocado

  • 2 Eggs

  • Salt and Pepper

  • Lime Juice (Optional)

  • Cilantro Leaves (Optional)

  • Coconut Oil or Butter

  • 1 Tomato

INSTRUCTIONS

1. Heat a little coconut oil in a pan on a medium flame.

2. Crack the eggs into the pack and cook sunny side for 3 to 4 minutes until the whites are set & yolks still runny. For scramble whisk the egg in a small bowl before adding to the pan.

​

3. Toast the bread slices and spread the avocado around with a drizzle of lemon juice and cilantro.

​

4. Top the toast with eggs and place the slice tomato on top.

​

5. Season with salt and pepper. Garnish with chopped cilantro leaves.

NOTES

  • Sliced bread: toasted, any variety would work. ( white or wheat)

​

  • Eggs: poached or fried, but keep the yolks runny.

​

  • Avocados: sliced or smashed.

​

  • Seasoning: salt and pepper.

​
